Matar Kachori (Koraishutir Kochuri) Recipe
Koraishutir Kochuri is a Popular Bengali breakfast dish served with Potato Curry(Aloo Curry) or Yellow Pea Curry(Ghugni) all over West Bengal. Walking down the aisles of the vegetable market in North Inda, you will find fresh green pea available everywhere. Pick some green pea's for yourself and let us prepare Koraishutir Kochuri together.
Gather the following ingredient for the Koraishutir Kochuri recipe -
For Matar stuffing-
1 Cup Fresh Pea(frozen pea also works well)
1 Small Size Onion
1 Teaspoon Chopped Ginger
1 Teaspoon Chopped Garlic
1 Teaspoon Green Chilli
1/2 Teaspoon Cumin Seed
1/4 Teaspoon Tumeric Powder
1/4 Teaspoon Red Chilli Powder
1/4 Teaspoon Garam Masala
Salt to taste
For Kachori Dough-
1 Cup Refined Wheat Flour (Maida)
1 Cup Wholemeal Wheat Flour (Atta)
1 Teaspoon Ghee/Oil
Pinch of Baking Soda
Salt to taste
Steps to prepare the Matar Stuffing-
- Heat some oil in a pan and add Cumin seeds into it.
- Once the cumin seeds turn brown, add the chopped ginger & garlic into it. Fry it properly.
- Then add the onions and green chili and continue frying them.
- Then add the spices - Tumeric powder, Red Chilli powder, Garam Masala & Salt to taste. Fry it properly till the spices are cooked well.
- Then add the Green Pea/Frozen Pea and cover it for some time.
- Switch off the gas after 2 minutes of cooking and let it cool down.
- Once it is cooled down, put it into a grinding jar and grind it till it is a fine paste.
- After the mixture is grinded properly, heat some oil in a pan and add the paste into it.
- Fry it for 1 minute to make it a dry paste.
- Then cool down the paste.
Note - Avoid adding water throughout this process.
Steps to prepare the Kachori Dough-
- 1. Mix the dry ingredients - Refined Wheat Flour (Maida), Wholemeal Wheat Flour (Atta), Baking Soda & Salt in a bowl.
- 2. Then add the Ghee/Oil (whichever is preferred by you) and mix well.
- 3. Then start adding water in small quantities, and bring the mixture to a dough consistency.
Steps to prepare the Koraishutir Kochuri -
- Make small balls of matar stuffing and dough. The size of matar stuffing should be the same as dough ball size.
- Once the dough and matar stuffing is equally divided, roll the dough into a small circle and put the matar stuffing ball into it. Then collect the sides of the circle and wrap them around the stuffing.
- Then roll the kachori ball in your hand to make it circular.
- Then take some flour or oil and put the Kachori balls on the rolling board and start rolling it slowly. Try to roll it as gently as possible so that the stuffing doesn't break out.
- Once the kachoris are ready, keep them aside and heat oil in a pan. Remember, that oil quantity should be more as the kachori need deep fry.
- When the oil is hot enough, start putting the kachoris one by one into the pan. Caution - Be careful around the hot oil.
- Take them out on a plate and serve them hot with Potato Curry(Aloo Curry) or Yellow Pea Curry(Ghugni) or even a spicy pickle that goes well with Koraishutir Kochuri.
